Holy Guacamole!! This simple recipe is perfect to add a bit of a kick to your meal prep. Who said healthy was boring? Try this easy guacamole recipe to add some variation, as well as a bunch of healthy fats, to your meals.


2 ripe avocados
handful fresh coriander
Juice of one lime
1 small red onion
2 tbsp jalapeños
Approx 1 tsp of the brine from the jalapeños


1. Chop the red onion and juice the lime. Scoop the flesh from the avocados.
2. Add everything to a blender and blitz.
3. Eat! Try this as a side with a salad, or with chilli con carne.
